Healthy Vanilla Oat Ice Cream

Here's what you'll need:

  • 1/4 cup medjool dates (soaked in hot water)

  • 1/3 cup Red Tractor Australian Cream Style Rolled Oats

  • 1/4 cup coconut yogurt (can also sub greek yogurt or cottage cheese)

  • 2 tbsp maple syrup

  • 1-2 tbsp vanilla pudding mix

  • 1 ½ cup almond milk

This vegan and gluten-free vanilla oat ice cream is a dream come true! 🤩 It tastes like a rich cake batter combined with the goodness of an oatmeal cookie in ice cream form! 😋 And guess what? It's naturally sweetened with dates and maple syrup! 🌟

And follow these simple steps:

  1. Place medjool dates in a jar and cover them with hot water. Let them soak for 15 minutes until they become soft and luscious. 💧

  2. Strain the water from the dates and put them into a blender with rolled oats, yogurt, maple syrup, vanilla pudding mix, and almond milk. Blend until smooth and no chunks of dates remain. 🔄

  3. Pour the mixture into the Ninja Creami container and securely place the lid on top. Freeze for 24 hours. ❄️

  4. Take the container out of the freezer, and put the Ninja Creami paddle on the lid, securing it. Process the pint on the lite ice cream setting of the Ninja Creami. 🔄

  5. Remove the ice cream from the Ninja Creami – it should be delightfully thick! 🥄 If you prefer a creamier consistency, you can respin with 1-2 tbsp almond milk. 🥛

  6. Now comes the best part – scoop, serve, and savor this incredible treat! 🍦🎉
