We pause today to observe Memorial Day. A time for the nation to decorate the graves of the war dead with flowers and honor their service. Many times these gatherings take on the character of an extended family reunion to which some people travel many miles to renew contacts with relatives and friends. The tradition of “dinner on the ground” where people used to spread the dishes out on sheets or tablecloths on the grass began before the American Civil War and reflects the real origin of the Memorial Day idea.
Our homage, a little idea, a wonderful dessert to prepare at home and enjoy anywhere you are during this special day: Patriotic Overnight Oats.
Here's what you'll need:
1 cup almond milk
½ cup coconut yogurt
1 tbsp vanilla protein powder
1 tbsp chia seeds
1 tbsp maple syrup
½ tsp vanilla
3-4 strawberries, sliced
¼ cup blueberries
And follow these simple steps:
Add all the ingredients into a jar except for the berries and stir well.
Cover with a lid and refrigerate overnight or for at least 2 hours.
Remove from fridge and layer strawberries, overnight oats and top with blueberries.
You can top with additional coconut yogurt and honey or maple syrup as well.
